A quick and healthy bowl featuring seasoned ground beef with Mediterranean-inspired flavors, served over a bed of cucumbers, zucchini, and sweet potato. The sweet potato is used in a unique, raw form.

Prepare the vegetables: Julienne (cut into thin matchsticks) the zucchini and cucumber. You can use a knife or a julienne peeler. Peel the sweet potato (optional). Then, julienne half of the sweet potato and dice the other half. Save the diced sweet potato.
